Mammoth Sweet Potato

I tried something new in the garden this year: sweet potatoes. They are a standard around our house, so I thought I'd give it a try. I had researched when to dig them up, and I learned it's supposed to be done around frost. So, I thought I was doing it a little early, but I decided to see how they were doing under there. However, I think this one was a little ahead of schedule:

I weighed him on my kitchen scale. Otto made a prediction - 3 1/2 pounds, and he was almost exact - it weighed 3 pounds and around 5 ounces!

If you are noticing the difference in color, it's from my potato scrubber. I asked him to use a brush to clean it, and he used the metal scrubbie!! =)



We were wondering if this monstrosity would even be good eating, so we chopped him up, boiled him and gave him a try. And he was GOOD!! It was enough to feed us all and then some! =)
